This is a fantastic way to use up any banana bread you have sitting on your counter. I love serving these for birthdays or casual weekend dinners because they feel fancy but come together in just a few minutes.

  • 4 slices of banana bread
  • 1 tablespoon unsalted butter
  • 2 cups high quality vanilla bean ice cream
  • 1 fresh banana, sliced
  • 1/4 cup caramel sauce
  • 2 tablespoons chopped pecans, toasted
