The secret is getting that beef nice and crispy before adding it to the bowl. I love using full fat coconut milk because it makes the broth taste so rich and creamy without needing to spend hours at the stove.

- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon red curry paste
- 1 can full fat coconut milk
- 2 cups beef broth
- 1 tablespoon soy sauce
- 2 cups cooked jasmine rice
- 2 green onions, sliced
- 1 lime, cut into wedges
