Parmesan Tomato Zucchini Tart

I love to use a pre made pie crust when I am short on time, but feel free to use your favorite homemade dough recipe if you have one ready. The key to keeping the crust crisp is to make sure your vegetables are not too wet before you layer them on.
🧺 Ingredients
- 1 pie crust, store bought or homemade
- 1 medium zucchini, thinly sliced
- 2 medium tomatoes, thinly sliced
- 1 cup grated parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1 egg, beaten for egg wash

Preheat your oven to 400 degrees Fahrenheit.

Roll out the pie crust on a piece of parchment paper and place it on a large baking sheet.

Sprinkle half of the parmesan cheese over the bottom of the crust, leaving a small border around the edges.

Arrange the zucchini and tomato slices in an overlapping pattern on top of the cheese.

Drizzle the vegetables with olive oil and sprinkle with the remaining parmesan, oregano, salt, and pepper.

Fold the edges of the dough over the vegetables to create a rustic crust.

Brush the edges of the dough with the beaten egg.

Bake for 25 to 30 minutes until the crust is golden brown and the vegetables are tender.

💡 Tips
Serve this warm for a light lunch alongside a crisp green salad. If you have leftovers, store them in the fridge and pop them in a warm oven for a few minutes to bring back that lovely crunch.
