This meal is my favorite way to reset when I want something fresh and vibrant. The combination of sweet peaches, zesty ginger, and savory chicken feels like summer on a plate, and it is a wonderful break from heavier meals.

My family loves this recipe because it is simple enough for a quick weeknight dinner but special enough for a big weekend gathering. If you are short on time, you can marinate the chicken for just fifteen minutes and it will still taste delicious.

  • 1/2 cup teriyaki sauce
  • 1 large garlic clove, grated
  • 1 lb chicken breasts
  • 2 teaspoons avocado oil
  • 4 peaches or nectarines, diced
  • 1/4 cup chopped scallions or cilantro
  • 1 teaspoon fresh ginger, grated
  • 1 to 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 1/2 tablespoons brown sugar
  • 1 teaspoon chili crisp
  • 1 to 2 tablespoons water
  • 1 cup white rice, for serving

    Slice the chicken breasts into thinner pieces or pound them out evenly.

    In a bowl or bag, combine the teriyaki sauce and grated garlic. Add the chicken and let it marinate in the fridge for 2 to 12 hours, though 15 to 30 minutes works in a pinch.

    Cook your white rice according to the package directions.

    In a small bowl, whisk together the soy sauce, toasted sesame oil, brown sugar, chili crisp, and water to create the sesame drench.

    In a medium bowl, toss the diced peaches with scallions, ginger, lime juice, salt, and sugar. Let it sit for a few minutes so the juices release.

    Heat the avocado oil in a large skillet over medium heat. Remove the chicken from the marinade and cook for 3 to 4 minutes per side, until it reaches an internal temperature of 165 degrees.

    Serve the warm chicken over rice, topped with the ginger peach mixture and a generous drizzle of the sesame sauce.

💡 Tips

Store any leftover chicken and peach mixture in separate airtight containers in the fridge for up to two days. If the peaches seem a little dry after being in the fridge, add a tiny drizzle of honey before serving.
