There is nothing quite like a big pot of creamy chowder to bring the family together at the dinner table. This recipe is one of my favorites because it uses fresh summer vegetables like sweet corn and bell peppers to create a bright, satisfying meal that everyone loves.

I like to make this when the nights start getting a little cooler, but it is delicious all year round. My biggest tip is to use rotisserie chicken if you are in a rush, as it keeps the prep time nice and short while still giving you plenty of protein.

🧺 Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 3 cups cooked chicken, shredded
  • 2 cups corn kernels, fresh or frozen
  • 4 cups chicken broth
  • 2 medium potatoes, peeled and cubed
  • 1 cup heavy cream
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

    Heat the olive oil in a large pot over medium heat.

    Add the onion and bell pepper to the pot and cook until they are soft.

    Stir in the garlic, cumin, and chili powder, and cook for one minute until fragrant.

    Pour in the chicken broth and add the cubed potatoes.

    Bring the mixture to a boil, then lower the heat and simmer until the potatoes are tender.

    Stir in the shredded chicken and the corn, cooking for another five minutes.

    Turn the heat down to low and stir in the heavy cream.

    Season the soup with salt and pepper to your liking.

    Serve warm with a sprinkle of fresh cilantro on top.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this with a side of warm cornbread or a handful of tortilla chips for a nice crunch.
