Sourdough French Onion Scones

- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 1/2 teaspoons fresh thyme leaves
- 1 cup shredded Gruyere cheese
- 1/2 cup cold unsalted butter, grated
- 1/2 cup sourdough discard
- 1/4 cup heavy cream
- 1/4 cup whole milk
- 1 large egg
- 1 large yellow onion, thinly sliced
- 1 tablespoon unsalted butter for onions
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 2 tablespoons beef broth

In a skillet, melt 1 tablespoon butter with olive oil over medium low heat. Add sliced onions, sugar, and a pinch of salt. Cook slowly until deep golden brown. Stir in beef broth and cook until the liquid evaporates. Set aside on a plate to cool completely.

In a bowl, combine flour, baking powder, salt, pepper, garlic powder, thyme, and shredded cheese. Mix in the cold caramelized onions.

Add the grated cold butter to the flour mixture and toss gently with a fork.

In a separate bowl, whisk together the sourdough discard, heavy cream, milk, and egg.
