There is nothing quite like the smell of cinnamon and apples filling the kitchen on a slow weekend morning. These applesauce muffins are a favorite in my house because they come out so incredibly moist and soft every single time.

My secret for getting those beautiful, bakery style tall tops is a quick temperature trick. You start the oven high to give them a boost, then lower it to finish baking them through without burning the tops. Don't skip the cinnamon sugar sprinkle at the end for that perfect little crunch.

🧺 Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup softened butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons cinnamon sugar for topping

👩‍🍳Instructions

  1. 1

Preheat your oven to 425 degrees Fahrenheit and line a muffin tin with paper liners.

  2. 2

In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.

  3. 3

In a separate bowl, cream together the butter and both sugars until the mixture is smooth.

  4. 4

Add the eggs, applesauce, and vanilla to the butter mixture and stir until combined.

  5. 5

Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.

  6. 6

Divide the batter evenly into your prepared muffin tin.

  7. 7

Bake at 425 degrees for 5 minutes, then reduce the heat to 375 degrees without opening the oven door.

  8. 8

Continue baking for another 15 to 18 minutes until a toothpick inserted into the center comes out clean.

  9. 9

Remove from the oven, sprinkle the tops with cinnamon sugar while they are still warm, and let them cool on a wire rack.

💡 Tips

These muffins stay fresh in an airtight container at room temperature for three days. If you have leftovers, you can freeze them for up to two months and thaw them on the counter whenever you need a quick snack.
