If you love the taste of a cake donut but want something easier to whip up, this snickerdoodle loaf is for you. It combines that nostalgic cinnamon sugar tang with a soft, buttery cake texture that pairs perfectly with your morning coffee.

I love this recipe because you do not have to worry about rolling out individual cookies. Simply mix, pour, and bake for a delicious treat that is wonderful to share with friends or enjoy as a slow weekend breakfast.

🧺 Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)
  • 1 cup powdered sugar (for glaze)
  • 1/2 teaspoon ground cinnamon (for glaze)
  • 2 to 3 tablespoons whole milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

👩‍🍳Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit. Grease an 8.5 by 4.5 inch loaf pan and line it with parchment paper.

  2. 2

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  3. 3

In a separate large bowl, whisk together the vegetable oil, sugar, eggs, buttermilk, and vanilla extract until well combined.

  4. 4

Add the dry ingredients to the wet ingredients and stir gently until just combined. Be careful not to overmix the batter.

  5. 5

Pour half of the batter into your prepared loaf pan.

  6. 6

In a small bowl, mix the 2 tablespoons of sugar and 1 teaspoon of cinnamon, then sprinkle this mixture evenly over the batter in the pan.

  7. 7

Pour the remaining batter on top and spread it out gently.

  8. 8

Bake for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool in the pan for 10 minutes before moving it to a wire rack.

  9. 9

While the loaf cools, whisk the powdered sugar, cinnamon, milk, and vanilla in a small bowl until smooth.

  10. 10

Drizzle the glaze over the cooled loaf and allow it to set before slicing.

💡 Tips

Store your leftover loaf in an airtight container at room temperature for up to three days. If you prefer, you can warm individual slices in the microwave for a few seconds before serving to get that fresh, bakery style softness back.
