This vinaigrette is a staple in my kitchen whenever I want to wake up a boring salad. It balances the deep heat of chipotle peppers with just a touch of sweetness to keep things interesting.

My best tip is to taste it as you blend. If you like things a little milder, just start with half of the chipotle pepper and add more until it hits your preferred spice level.

🧺 Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/4 cup apple cider vinegar
  • 1 chipotle pepper in adobo sauce
  • 1 tablespoon honey or agave nectar
  • 1 clove garlic, peeled
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

    Place the olive oil, apple cider vinegar, chipotle pepper, honey, garlic, cumin, salt, and pepper into a blender.

    Blend everything on high speed until the dressing is completely smooth and emulsified.

    Taste the vinaigrette and adjust the seasoning with a little more salt or honey if you feel it needs it.

    Pour the dressing into a glass jar and keep it in the fridge until you are ready to serve.

💡 Tips

This dressing stays fresh in an airtight jar in your refrigerator for up to one week. Give it a good shake before each use as the ingredients may naturally separate while sitting.
