There is nothing quite like a whole roasted chicken on a Sunday. Using the slow cooker keeps the meat perfectly moist while freeing up your oven for sides like potatoes or fresh rolls.

My best tip for this recipe is to pat the chicken dry before adding your seasonings. This helps the herbs and spices stick to the skin and creates a much better flavor in every bite.

🧺 Ingredients

  • 1 whole chicken, about 4 pounds
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all purpose flour
  • 0.25 cup water or chicken broth

👩‍🍳Instructions

  1. 1

Remove the giblets from the chicken and pat the bird dry with paper towels.

  2. 2

Mix the paprika, thyme, garlic powder, salt, and pepper in a small bowl, then rub this mixture all over the outside and inside of the chicken.

  3. 3

Place the chicken in the slow cooker breast side up.

  4. 4

Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the chicken is fully cooked through.

  5. 5

Remove the chicken carefully from the slow cooker and let it rest on a platter.

  6. 6

Whisk the flour and water together in a small bowl to make a slurry, then stir it into the juices left in the slow cooker.

  7. 7

Cook the juices on high for 10 minutes or until the gravy thickens to your liking before serving over the chicken.

💡 Tips

Serve this with creamy mashed potatoes and steamed carrots to soak up the extra gravy. Store any leftover chicken in an airtight container in the fridge for up to three days.
