Slow Cooker Steak and Rich Gravy

- 4 beef round steaks or chuck steaks, about 1.5 to 2 pounds total
- 4 slices bacon, chopped
- 1 medium yellow onion, sliced
- 8 ounces cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons cornstarch
- 2 tablespoons cold water

In a large skillet over medium heat, cook the chopped bacon until it is nice and crispy. Remove the bacon with a slotted spoon and set it aside, leaving the bacon grease in the skillet.

Season your steaks generously on both sides with salt and black pepper. Sear them in the hot bacon grease for about 2 to 3 minutes on each side until they have a nice brown crust, then transfer them to the bottom of your slow cooker.

In the same skillet, add the sliced onion and mushrooms. Cook them for about 5 minutes until they start to soften, then stir in the minced garlic and cook for just 1 more minute.

Pour the beef broth, Worcestershire sauce, and dried thyme into the skillet, stirring well and scraping up any tasty browned bits from the bottom of the pan.

Pour the vegetable and broth mixture over the steaks in the slow cooker. Scatter the cooked bacon on top.

Cover and cook on low for 7 to 8 hours, or on high for 4 to 5 hours, until the steak is completely tender.

In a small bowl, whisk the cornstarch and cold water together to make a smooth slurry. Stir this mixture into the slow cooker liquid during the last 30 minutes of cooking to thicken it into a beautiful gravy. Serve hot.

Store any leftovers in an airtight container in the fridge for up to three days. When you reheat it on the stove, you can add a splash of beef broth if the gravy has thickened up too much. This dish also freezes beautifully for an easy freezer meal later on.
