Slow Cooker Cowboy Casserole

My family loves how tender the potatoes get after simmering in the savory sauce. If you want to add a little extra color, feel free to toss in some frozen corn or green beans during the last hour of cooking.
🧺 Ingredients
- 1 pound ground pork sausage
- 1 onion, diced
- 2 pounds russet potatoes, peeled and cut into 1 inch cubes
- 1 can condensed cream of mushroom soup
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 cups shredded cheddar cheese
- Salt and black pepper to taste
- Fresh parsley for garnish

Brown the sausage and diced onion in a large skillet over medium heat until the meat is fully cooked and the onions are soft.

Drain any excess grease from the skillet and set the sausage mixture aside.

In a small bowl, whisk together the cream of mushroom soup, sour cream, garlic powder, and smoked paprika.

Place the cubed potatoes into the base of your slow cooker.

Add the cooked sausage mixture on top of the potatoes.

Pour the soup mixture over everything and stir gently to combine all the ingredients.

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the potatoes are tender.

Sprinkle the shredded cheese over the top, cover the pot again, and let it sit for 5 minutes until the cheese is perfectly melted.

Store any leftovers in an airtight container in the fridge for up to three days. This casserole reheats beautifully in the microwave or a low oven. It is wonderful served alongside a crisp green salad to balance out the richness of the cheese.
