Slow Cooker Chicken Corn Chowder
This creamy and comforting chicken corn chowder is a simple meal that practically makes itself in your slow cooker.
recipesbynani.comThere is nothing quite like a warm bowl of chowder on a chilly evening. This recipe is a favorite in my house because you can just toss everything into the slow cooker, set it, and go about your day while the kitchen starts to smell amazing.
My best tip for this soup is to stir in the cream or milk right at the very end. Adding it toward the finish keeps the texture smooth and prevents the dairy from curdling during the long cooking time.
🧺 Ingredients
- 1 pound boneless skinless chicken breasts
- 2 cups frozen corn kernels
- 2 cups potatoes, peeled and cubed
- 1 cup carrots, diced
- 1/2 cup onion, finely chopped
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1 cup heavy cream
- Salt and pepper to taste

Place the chicken breasts, corn, potatoes, carrots, and onion into your slow cooker.
- 2
Add the chicken broth, dried thyme, and garlic powder into the pot.
- 3
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is tender and the vegetables are soft.

Remove the chicken breasts and shred them with two forks before returning the meat back into the pot.

Stir in the heavy cream and season with salt and pepper to your liking.
- 6
Let the soup sit for another 10 minutes to heat through before serving.
💡 Tips
This soup keeps well in the refrigerator for up to 3 days in an airtight container. If you want to serve it with a bit of a crunch, sprinkle some crispy bacon bits or fresh chives over the top of each bowl.
