Slow Cooked Shredded Beef Enchiladas
These tender shredded beef enchiladas are a cozy, crowd pleasing meal that is perfect for busy weeknights.
recipesbynani.comThere is nothing quite like coming home to the smell of beef slow cooking all day. These enchiladas are a favorite in my kitchen because the meat gets so incredibly tender, making it easy to shred and pack into soft tortillas with plenty of beans and melted cheese.
My top tip for this recipe is to not skimp on the sauce. Make sure every tortilla is well coated before you bake them so the edges stay soft and soak up all that delicious flavor while they are in the oven.
🧺 Ingredients
- 2 pounds beef chuck roast
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 2 cups enchilada sauce
- 10 to 12 flour tortillas
- 2 cups shredded cheddar or Monterey Jack cheese
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish

Place the beef, chopped onion, and minced garlic into your slow cooker or Instant Pot.

Season with the cumin, chili powder, salt, and pepper.

If using a slow cooker, cover and cook on low for 8 hours or high for 4 hours. If using an Instant Pot, cook on high pressure for 60 minutes with a natural release.

Once the beef is tender, remove it from the pot and shred it well using two forks.

Stir the drained black beans and about half a cup of the enchilada sauce into the shredded beef.

Preheat your oven to 375 degrees Fahrenheit.

Spoon a generous amount of the beef mixture into each tortilla, roll them up tightly, and place them seam side down in a greased baking dish.

Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle evenly with the shredded cheese.

Bake for 20 minutes or until the cheese is bubbly and slightly golden.
💡 Tips
Store any leftovers in an airtight container in the fridge for up to three days. These reheat beautifully in the microwave or a warm oven. If you like a bit of heat, serve these topped with fresh sliced jalapenos or a scoop of cool sour cream.
