Simple Turkey and Veggie Skillet

recipesbynani.comGround turkey is one of my favorite things to keep in the freezer because it is so versatile and cooks up quickly. This skillet recipe is a staple in my house when I want something healthy and filling without spending all evening in the kitchen.
I love serving this as is, but it also tastes wonderful tucked into lettuce wraps or piled onto some brown rice. A little extra splash of soy sauce or hot sauce really brings all the flavors together at the end.
🧺 Ingredients
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chopped broccoli florets
- 1 bell pepper, chopped
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup chicken broth

Heat the olive oil in a large skillet over medium heat.

Add the onion and cook for about 3 minutes until it starts to soften.

Add the ground turkey to the pan and cook until it is browned and no longer pink.

Sprinkle with oregano, salt, and pepper.

Pour in the chicken broth and cover the skillet with a lid.

Store any leftovers in an airtight container in the fridge for up to three days. You can also freeze this mixture for quick lunches later in the month. If you want more flavor, try topping your bowl with some fresh parsley or a squeeze of lime juice.
