This roasted vegetable bowl is one of my favorite ways to get a healthy meal on the table without any fuss. It is filling, colorful, and packed with textures that make eating your veggies feel like a treat rather than a chore.

My biggest tip for this one is to roast a big batch of vegetables at the start of the week. You can toss them into salads or warm them up for a quick lunch whenever you are in a rush.

🧺 Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 large sweet potato, cubed
  • 1 head of broccoli, chopped into florets
  • 1 red bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon juice

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the sweet potato, broccoli, and bell pepper on a large baking sheet with the olive oil, oregano, salt, and pepper.

    Roast the vegetables for about 25 minutes or until they are tender and slightly browned.

    While the veggies roast, rinse the quinoa under cold water.

    Combine the quinoa and vegetable broth in a pot, bring it to a boil, then cover and simmer for 15 minutes.

    Remove the quinoa from the heat and let it sit covered for 5 minutes before fluffing with a fork.

    Divide the quinoa into bowls and top with the roasted vegetables.

    Finish each bowl with a sprinkle of feta cheese and a squeeze of fresh lemon juice.

💡 Tips

Store the cooked quinoa and roasted vegetables in separate airtight containers in the fridge for up to four days. If you want extra protein, stir in a handful of cooked chickpeas or top with a poached egg before serving.
