There is nothing quite like the smell of a juicy chicken roasting in the oven to make a house feel like a home. This recipe is a favorite because it uses simple ingredients that most of us already have in the pantry, and it always comes out perfectly golden and delicious.

If you want the skin to be extra crispy, try to pat the chicken as dry as possible with paper towels before adding the butter and herbs. It makes such a big difference in the final texture.

🧺 Ingredients

  • 1 whole chicken, about 4 pounds
  • 3 tablespoons softened butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 large lemon, halved
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper

👩‍🍳Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Pat the chicken dry with paper towels and place it in a large roasting pan.

  3. 3

In a small bowl, mix together the softened butter, olive oil, minced garlic, rosemary, thyme, salt, and pepper.

  4. 4

Rub the butter mixture all over the chicken, making sure to get some under the skin of the breast area.

  5. 5

Place the lemon halves inside the cavity of the chicken.

  6. 6

Roast for about 60 to 75 minutes, or until the juices run clear and the internal temperature reaches 165 degrees Fahrenheit.

  7. 7

Let the chicken rest for at least 15 minutes before carving to keep it juicy.

💡 Tips

Serve this with roasted root vegetables or a fresh garden salad to round out the meal. You can store any leftover meat in an airtight container in the fridge for up to three days, and it makes excellent sandwiches or salad toppings for lunch the next day.
