Simple Roasted Asparagus Two Ways
This is my favorite way to prepare tender asparagus with just a little bit of seasoning and a hot oven.

I love to make this two ways depending on what I have in my pantry. You can keep it classic with just salt and pepper, or go for the cheesy version with a dusting of Parmesan. Just make sure to snap off the woody ends before you start cooking.

- 1 pound fresh asparagus stalks
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)

Preheat your oven to 400 degrees Fahrenheit.

Wash the asparagus and pat it dry with a paper towel.

Hold each stalk at both ends and bend it until it snaps. The woody bottom part will break off naturally at the right spot. Discard those ends.

Place the asparagus spears on a large rimmed baking sheet.

Drizzle the olive oil over the asparagus and use your hands to toss them until every stalk is evenly coated.

Sprinkle the salt and pepper over the top.

If you want the cheesy version, sprinkle the Parmesan cheese over the spears now.

Roast in the oven for 10 to 15 minutes or until the stalks are tender and slightly browned at the tips.

Remove from the oven and serve immediately while hot.
💡 Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them quickly in a pan or eat them cold as part of a salad. For a citrus kick, squeeze a little fresh lemon juice over the top right before serving.
