Simple Green Beans with Bacon
This is my go to side dish when I want something comforting, savory, and fresh all at once.

- 4 slices thick cut bacon, chopped
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced

Bring a large pot of salted water to a boil and cook the green beans for about 3 to 4 minutes until they are bright green and tender but still have a bit of a crunch.

Drain the beans and immediately place them in a bowl of ice water to stop the cooking, then drain them again and set aside.

Place the chopped bacon in a large skillet over medium heat and cook until it is brown and crispy.

Use a slotted spoon to remove the bacon bits from the pan and set them on a paper towel, but leave about one tablespoon of the bacon fat in the skillet.

Add the butter to the skillet with the bacon fat, then stir in the minced garlic for about 30 seconds until it smells wonderful.

Add the green beans to the skillet and toss them well to coat in the garlic butter.

Cook for 2 minutes to heat everything through, then stir in the crispy bacon bits, salt, and pepper before serving.
