- 3 cups shredded green cabbage
- 1 large carrot, julienned or grated
- 1 cup cucumber, sliced into thin matchsticks
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh mint leaves, torn
- 1/4 cup peanuts, crushed
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 fresh red chili, finely sliced
