There is nothing quite like a cold salad when the weather warms up. This cucumber feta salad is one of my absolute favorites because it is filling enough for a light lunch but fresh enough to serve as a side dish at any dinner party.

I love to make this ahead of time so the lemon dressing has a chance to soak into the couscous and chickpeas. If you want a little extra crunch, try adding some toasted pine nuts right before you serve it.

🧺 Ingredients

  • 1 cup dry couscous
  • 1.5 cups vegetable broth
  • 2 large cucumbers, diced
  • 1 can chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 1/2 red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

    Bring the vegetable broth to a boil in a small pot.

    Add the couscous, cover the pot with a lid, and remove it from the heat.

    Let the couscous sit for five minutes, then fluff it gently with a fork and let it cool down.

    In a large bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.

    Add the cooked couscous, diced cucumbers, chickpeas, red onion, and parsley to the bowl.

    Toss everything together until well combined.

    Gently fold in the crumbled feta cheese so it stays chunky and nice.

    Serve immediately or keep it in the fridge for an hour to let the flavors blend.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to two days. If you find the salad looks a little dry the next day, just add a tiny squeeze of fresh lemon juice or a splash of olive oil to freshen it up.
