Perfect Roast Chicken with Twice Baked Potatoes
A classic, comforting roast chicken dinner that fills the house with the most delicious aroma.
recipesbynani.comThere is truly nothing like a classic roast chicken for a Sunday dinner. It is simple, soul warming, and always hits the spot when you gather the family around the table.
I love to roast two chickens at once so that I have plenty of meat leftover for easy meals during the busy week. Serving this with twice baked potatoes makes the whole meal feel extra special.
🧺 Ingredients
- 2 whole chickens, about 4 pounds each
- 4 tablespoons butter, softened
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 4 large baking potatoes
- 1/2 cup sour cream
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 2 green onions, sliced
👩🍳Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Pat the chickens dry with paper towels and rub the skin with softened butter, rosemary, salt, and pepper.
- 3
Place the chickens in a large roasting pan and roast for about 75 minutes, or until the juices run clear and the skin is golden brown.
- 4
While the chicken roasts, bake the potatoes in the oven until tender, which takes about 60 minutes.
- 5
Slice the baked potatoes in half and scoop out the centers into a bowl, leaving a thin layer of potato in the skins.
- 6
Mash the potato centers with the sour cream, milk, cheese, and green onions.
- 7
Spoon the mixture back into the potato skins and bake for another 15 minutes until the cheese is melted and bubbly.
- 8
Let the chicken rest for 10 minutes before carving and serving with the potatoes.
💡 Tips
Store any leftover chicken in an airtight container in the fridge for up to 3 days. You can reheat the potatoes in the microwave or the oven until warmed through.
