There is truly nothing like a classic roast chicken for a Sunday dinner. It is simple, soul warming, and always hits the spot when you gather the family around the table.

I love to roast two chickens at once so that I have plenty of meat leftover for easy meals during the busy week. Serving this with twice baked potatoes makes the whole meal feel extra special.

🧺 Ingredients

  • 2 whole chickens, about 4 pounds each
  • 4 tablespoons butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 4 large baking potatoes
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 2 green onions, sliced

    Preheat your oven to 400 degrees Fahrenheit.

    Pat the chickens dry with paper towels and rub the skin with softened butter, rosemary, salt, and pepper.

    Place the chickens in a large roasting pan and roast for about 75 minutes, or until the juices run clear and the skin is golden brown.

    While the chicken roasts, bake the potatoes in the oven until tender, which takes about 60 minutes.

    Slice the baked potatoes in half and scoop out the centers into a bowl, leaving a thin layer of potato in the skins.

    Mash the potato centers with the sour cream, milk, cheese, and green onions.

    Spoon the mixture back into the potato skins and bake for another 15 minutes until the cheese is melted and bubbly.

💡 Tips

Store any leftover chicken in an airtight container in the fridge for up to 3 days. You can reheat the potatoes in the microwave or the oven until warmed through.
