Peppermint Brownie Ice Cream Bars
These cool and fudgy bars combine a chewy brownie base with creamy peppermint ice cream for the perfect holiday dessert.
recipesbynani.comThere is something special about the combination of rich chocolate and refreshing peppermint during the holiday season. These bars are always a hit at my house because they are easy to share and taste like a fancy shop dessert right from your own kitchen.
My secret for these bars is to make sure your brownie base is completely cooled before you add the ice cream. If the brownies are even a little warm, the ice cream will melt too fast and make a bit of a mess.
🧺 Ingredients
- 1 box brownie mix plus required eggs and oil
- 1 1/2 cups crushed Oreo cookies
- 1.5 quarts peppermint ice cream, softened
- 1/2 cup chocolate fudge sauce
- 1/4 cup crushed candy canes for topping
👩🍳Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit and line a 9 by 13 inch baking pan with parchment paper.
- 2
Prepare the brownie mix according to the package directions and spread the batter into the prepared pan.
- 3
Bake the brownies for 20 to 25 minutes or until a toothpick comes out mostly clean.
- 4
Let the brownies cool completely on a wire rack.
- 5
Once cool, spread the softened peppermint ice cream in an even layer over the brownies.
- 6
Drizzle the chocolate fudge sauce over the ice cream and sprinkle with the crushed Oreos and candy canes.
- 7
Cover the pan and freeze for at least 4 hours until the ice cream is firm.
- 8
Lift the bars out using the parchment paper and slice into squares to serve.
💡 Tips
Store these in the freezer for up to two weeks, but be sure to wrap them tightly in plastic wrap to keep them fresh. You can also swap the peppermint ice cream for vanilla if you prefer a classic flavor combination.
