Patriotic Star Spangled Cookies

recipesbynani.comThese cookies are a favorite at my house whenever the weather starts to get warm. They are soft, buttery, and so easy to whip up for a backyard picnic. The colorful stars make them look special without needing any fancy decorating skills.
I like to chill the dough for a little bit before baking so the cookies stay nice and thick. If you have little ones around, they will love helping you press the stars into the tops before these go into the oven.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup red, white, and blue star sprinkles

Preheat your oven to 350 degrees and line two large baking sheets with parchment paper.

In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.

Add the egg and vanilla extract to the butter mixture and beat until well combined.

Whisk the flour, baking powder, and salt together in a separate small bowl.

Slowly add the dry ingredients to the wet ingredients and mix until a soft dough forms.

Scoop about two tablespoons of dough at a time and roll them into smooth balls.

Place the balls on the baking sheets and press them down slightly with the palm of your hand.

Press a generous amount of star sprinkles into the top of each cookie.

Store these in an airtight container at room temperature for up to five days. You can also freeze the baked cookies for a couple of months if you want to make them ahead of time.
