Pan Seared Pork Tenderloin with Mushroom Sauce
A juicy pork tenderloin topped with a savory mushroom pan sauce that tastes like a special occasion meal.
recipesbynani.comThere is something so satisfying about a perfectly cooked pork tenderloin. It is lean and tender, and when you sear it first to lock in the juices, it stays incredibly moist. This recipe is one of my favorites because it feels fancy enough for a dinner party but is simple enough to put together on a busy weeknight.
The secret is the mushroom sauce. By using the same pan you cooked the pork in, you catch all those delicious browned bits from the meat. A splash of broth and a dash of thyme make it smell heavenly while it simmers.
🧺 Ingredients
- 1 whole pork tenderloin, about 1 pound
- 1 tablespoon olive oil
- 2 tablespoons butter
- 8 ounces sliced mushrooms
- 1 teaspoon dried thyme
- 1/2 cup chicken or beef broth
- 1 tablespoon Worcestershire sauce
- Salt and black pepper to taste
👩🍳Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Pat the pork tenderloin dry with paper towels and season it generously on all sides with salt and pepper.
- 3
Heat the olive oil in a large oven safe skillet over medium high heat.
- 4
Add the pork to the hot skillet and sear it for about 2 minutes per side until it develops a nice golden brown crust.
- 5
Move the skillet into the oven and roast the pork for 15 to 20 minutes, or until a meat thermometer reads 145 degrees Fahrenheit in the thickest part.
- 6
Remove the pork from the pan and set it on a cutting board to rest for 5 minutes.
- 7
While the pork rests, place the skillet back on the stove over medium heat and melt the butter.
- 8
Add the mushrooms and cook them until they are soft and browned, then stir in the thyme, broth, and Worcestershire sauce.
- 9
Let the sauce bubble for a few minutes until it reduces slightly, then slice the pork and serve it with the mushrooms spooned over the top.
💡 Tips
Let your meat rest for at least 5 minutes before slicing so the juices stay inside the pork. You can store any leftovers in an airtight container in the fridge for up to 3 days. This tastes great served alongside some roasted green beans or creamy mashed potatoes.
