I really love cooking with chicken drumsticks because they are so budget friendly and always stay juicy in the oven. This recipe gives them a fun satay makeover that is perfect for a casual family dinner.

The secret is making a few small slashes in the meat before you coat them in the marinade. This lets all those tasty spices soak right into the chicken, which means you get big flavor even if you are in a rush and cannot let them sit to marinate for a long time.

🧺 Ingredients

  • 10 large chicken drumsticks, about 1.5kg
  • 1 cup coconut milk, divided
  • 2 tablespoons Thai red curry paste, divided
  • 1 tablespoon curry powder
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1/2 cup natural peanut butter
  • 1/2 cup milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dark soy sauce

    Use a sharp knife to make 3 small slashes into the meaty side of each drumstick to help the flavor penetrate.

    In a large bowl, whisk together 1/4 cup of the coconut milk, 1 tablespoon of the red curry paste, the curry powder, oil, salt, and sugar.

    Add the chicken legs to the bowl and toss well, making sure to rub the marinade into the slashes.

    Let the chicken marinate for at least 3 hours or overnight in the fridge if you have the time.

    Preheat your oven to 200C and place the chicken on a wire rack set over a baking tray. Bake for 35 to 40 minutes until golden and cooked through.

    While the chicken bakes, combine the remaining coconut milk, peanut butter, remaining curry paste, milk, vinegar, and soy sauce in a small saucepan over medium heat.

    Whisk the sauce until smooth and warm, then serve alongside the crispy chicken for dipping.

💡 Tips

You can store any leftover peanut sauce in a sealed container in the fridge for up to three days. If it thickens too much, just stir in a splash of warm water or milk before serving. These drumsticks are delicious served with fluffy jasmine rice and some steamed greens.
