This cheesy beef pasta is a staple in my kitchen because it is so easy to pull together after a long day. The mushrooms add a lovely savory depth, and the spinach tucks in perfectly for a bit of green in every bowl.

My kids always ask for seconds when this is on the table, and I love that it only leaves me with one pan to wash. A little tip is to stir the cheese in at the very end so it stays nice and gooey without separating.

  • 1 pound ground beef
  • 8 ounces sliced mushrooms
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 12 ounces penne or rotini pasta
  • 3 cups beef broth
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 1.5 cups shredded cheddar cheese
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
