I have been looking for simple ways to add more zucchini to our dinners, and this orzo recipe is an absolute favorite. It is filled with golden chicken sausage, tender zucchini, and fresh spinach, all tossed in a creamy sauce that feels like true comfort food.

What I love most is how simple the cleanup is since everything happens in one pan. A little squeeze of fresh lemon and a sprinkle of salty feta make the flavors shine, and it is the perfect meal to keep in your regular rotation.

🧺 Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken sausage, sliced into rounds
  • 1 medium zucchini, diced
  • 1 cup dry orzo pasta
  • 2 1/2 cups chicken broth
  • 2 cups fresh baby spinach
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh chopped dill
  • Salt and pepper to taste

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. If the pasta absorbs too much liquid while stored, add a tiny splash of water or broth when reheating to keep it creamy.
