This creamy pepperoncini chicken has quickly become a favorite in my house because it is so simple to make but tastes like a fancy restaurant meal. The combination of the tangy peppers and the velvety Parmesan cream sauce creates a flavor profile that is absolutely delicious.

Since everything cooks in one skillet, cleanup is a total breeze on busy weeknights. If you want to make the most of the sauce, I highly recommend serving this over a bed of fluffy rice or creamy mashed potatoes to soak up every last drop.

🧺 Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 tablespoons olive oil, divided
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium red bell pepper, sliced
  • 1/3 cup yellow onion, diced
  • 1/2 cup pepperoncini peppers, drained and sliced
  • 3/4 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

    Heat 2 tablespoons of olive oil in a large skillet over medium high heat. Add the chicken and cook for 7 to 8 minutes per side until golden and cooked through. Remove the chicken from the skillet and set it aside on a plate.

    Add the remaining tablespoon of olive oil to the same skillet. Stir in the sliced bell pepper and onion, cooking for 3 to 5 minutes until they are soft.

    Pour in the chicken broth and the sliced pepperoncini peppers. Let the liquid cook for about 2 minutes to reduce by half.

    Stir in the heavy cream and grated Parmesan cheese. Bring the sauce to a gentle simmer and cook for another 2 minutes until it begins to thicken, adding a little extra salt and pepper if you like.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to eat, simply reheat individual portions in the microwave for 1 to 2 minutes until everything is warmed through.
