This is my favorite recipe for those nights when I just want a hot meal without the cleanup. You basically dump everything into a baking dish and let your oven do all the hard work for you.

I love adding fresh spinach and cherry tomatoes because they wilt down perfectly while the gnocchi cooks. It makes the dish feel like a complete meal without having to stand over the stove.

🧺 Ingredients

  • 1 package (16 ounces) shelf stable or refrigerated potato gnocchi
  • 1 package (12 to 16 ounces) frozen cooked meatballs, thawed
  • 1 jar (24 ounces) of your favorite marinara sauce
  • 1 cup cherry tomatoes
  • 2 cups fresh baby spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder

    Preheat your oven to 400 degrees Fahrenheit.

    In a 9x13 inch baking dish, combine the gnocchi, meatballs, marinara sauce, cherry tomatoes, and garlic powder. Stir everything together until well combined.

    Cover the baking dish tightly with aluminum foil.

    Bake for 20 minutes.

    Remove the foil, stir in the fresh baby spinach, and sprinkle the mozzarella and Parmesan cheese over the top.

    Bake uncovered for another 10 to 15 minutes or until the cheese is melted and bubbly.

💡 Tips

Leftovers store beautifully in an airtight container for up to three days. I recommend reheating it in the oven or microwave with a tiny splash of water to keep the sauce from drying out.
