One Pan Baked Gnocchi and Meatballs
A cozy and cheesy dinner that comes together with almost zero effort.
recipesbynani.comThis is my favorite recipe for those nights when I just want a hot meal without the cleanup. You basically dump everything into a baking dish and let your oven do all the hard work for you.
I love adding fresh spinach and cherry tomatoes because they wilt down perfectly while the gnocchi cooks. It makes the dish feel like a complete meal without having to stand over the stove.
🧺 Ingredients
- 1 package (16 ounces) shelf stable or refrigerated potato gnocchi
- 1 package (12 to 16 ounces) frozen cooked meatballs, thawed
- 1 jar (24 ounces) of your favorite marinara sauce
- 1 cup cherry tomatoes
- 2 cups fresh baby spinach
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
👩🍳Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
In a 9x13 inch baking dish, combine the gnocchi, meatballs, marinara sauce, cherry tomatoes, and garlic powder. Stir everything together until well combined.
- 3
Cover the baking dish tightly with aluminum foil.
- 4
Bake for 20 minutes.
- 5
Remove the foil, stir in the fresh baby spinach, and sprinkle the mozzarella and Parmesan cheese over the top.
- 6
Bake uncovered for another 10 to 15 minutes or until the cheese is melted and bubbly.
💡 Tips
Leftovers store beautifully in an airtight container for up to three days. I recommend reheating it in the oven or microwave with a tiny splash of water to keep the sauce from drying out.
