There is something so comforting about a warm, toasted burrito filled with savory ground beef and beans. This is my go to recipe for busy weeknights when I need something filling that everyone at the table will actually enjoy eating.

My biggest tip is to make a double batch when you have the time. These freeze beautifully, so having a few tucked away in the freezer makes lunch or dinner a breeze whenever things get a little hectic during the week.

🧺 Ingredients

  • 1 pound lean ground beef
  • 1 can pinto beans, rinsed and drained
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 2 cups shredded cheddar or Mexican blend cheese
  • 6 large flour tortillas
  • Optional toppings like sour cream, guacamole, or extra salsa

    Brown the ground beef in a large skillet over medium heat until it is fully cooked through, then drain any excess fat.

    Stir the pinto beans, salsa, and taco seasoning into the beef and let it simmer for about five minutes so the flavors blend together.

    Lay out the tortillas and spoon a generous amount of the beef mixture into the center of each one.

    Sprinkle a handful of shredded cheese over the beef filling.

    Fold the sides of each tortilla in and roll them up tightly to seal the contents inside.

    Place the burritos back into the skillet over medium heat and toast them for a minute or two on each side until they are golden brown and the cheese is melted.

💡 Tips

To freeze these, wrap each burrito individually in foil or plastic wrap and place them in a freezer bag. When you are ready to eat, simply thaw them in the fridge overnight or heat them frozen in the microwave and finish in a hot pan for a crisp shell.
