There is something so soothing about a big pot of vegetable soup simmering on the stove. This recipe uses simple ingredients like cabbage, carrots, and tomatoes to create a light yet satisfying meal that warms you up from the inside out.

I love how easily this comes together in just one pot. My favorite tip is to let the soup sit for a few minutes after you take it off the heat, as this allows all those lovely herbs to really meld into the broth.

🧺 Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 large carrots, shredded
  • 1 small head green cabbage, chopped
  • 1 can diced tomatoes
  • 2 tablespoons tomato paste
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large soup pot over medium heat.

  2. 2

Add the onion and cook until soft, then stir in the garlic and cook for another minute.

  3. 3

Add the shredded carrots and chopped cabbage, stirring until the cabbage begins to wilt slightly.

  4. 4

Stir in the tomato paste, diced tomatoes, vegetable broth, bay leaf, and Italian seasoning.

  5. 5

Bring the soup to a gentle boil, then turn the heat down to low.

  6. 6

Simmer for about 20 minutes until the cabbage and carrots are tender.

  7. 7

Remove the bay leaf, season with salt and pepper, and serve warm.

💡 Tips

This soup keeps beautifully in the fridge for up to five days in an airtight container. It actually tastes even better the next day after the flavors have had more time to blend. You can also freeze individual portions for an easy lunch whenever you need one.
