I learned this recipe back in culinary school and it has been a staple in my kitchen ever since. It is the ultimate comfort food because it is just so packed with garden vegetables and rich olive oil.

My favorite thing about this soup is how the flavors meld together as it simmers on the stove. If you have some extra time, let it sit for a few minutes after cooking because it tastes even better once the ingredients settle.

🧺 Ingredients

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 eggplant, peeled and diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cups diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh basil for garnish

    Heat the olive oil in a large pot over medium heat.
