Nani's Fluffy Banana Pancakes
These pancakes taste exactly like warm banana bread right off the griddle.
recipesbynani.comThere is nothing quite like the smell of bananas and cinnamon hitting the pan on a slow weekend morning. These pancakes are soft, slightly sweet, and get those beautiful golden edges from a little butter in the skillet.
My biggest tip is to use the ripest bananas you can find. If the peel has brown spots, it means the natural sugar is high, which makes the pancakes taste even better.
๐งบ Ingredients
- 1 1/2 cups all purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large ripe bananas, mashed well
- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
๐ฉโ๐ณInstructions
- 1
Whisk the flour, sugar, baking powder, baking soda, salt, and cinnamon together in a large mixing bowl.
- 2
In a separate bowl, stir the mashed bananas, egg, milk, melted butter, and vanilla extract until smooth.
- 3
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix as a few small lumps are perfectly fine.

Heat a lightly buttered griddle or nonstick pan over medium heat.
- 5
Pour about one quarter cup of batter onto the pan for each pancake.
- 6
Cook until bubbles form on the surface and the edges look set, then flip and cook until the other side is golden brown.
๐ก Tips
Serve these warm with a drizzle of maple syrup and a few slices of fresh banana on top. If you have leftovers, store them in the fridge and pop them in the toaster to reheat for a quick breakfast during the week.
