Nani’s Easy Zucchini Bread

My secret tip is to squeeze as much water as you can out of the grated zucchini using a clean kitchen towel before you mix it into the batter. This ensures your bread has the perfect texture without being soggy.

- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups grated zucchini
