There is something so satisfying about a crunchy taco night at home. These black bean tacos are a favorite in my kitchen because they come together quickly and are filled with hearty, flavorful ingredients that everyone enjoys.

My best tip for keeping them crispy is to make sure your bean mixture is not too wet before you scoop it into the shells. Serve these up with your favorite salsa or some cool sour cream for a complete meal.

🧺 Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 bell pepper, finely diced
  • 2 cloves garlic, minced
  • 2 cans black beans, rinsed and drained
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup corn kernels
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 12 corn tortillas
  • Cooking spray or melted butter

    Preheat your oven to 400 degrees Fahrenheit and lightly grease a large baking sheet.

    Heat the olive oil in a pan over medium heat and sauté the onion and bell pepper until they are soft.

    Add the minced garlic, cumin, and chili powder to the pan and cook for one minute until fragrant.

    Stir in the black beans and corn, cooking for about 5 minutes while lightly mashing some of the beans with a fork to help them stick together.

    Warm the corn tortillas in the microwave for 20 seconds so they do not break when folded.

    Place a spoonful of the bean mixture onto one half of each tortilla, sprinkle with a generous pinch of cheese, and fold the tortilla over.

    Arrange the tacos on your baking sheet and lightly brush or spray the tops with oil.

    Bake for 15 to 20 minutes until the edges are golden and crispy, flipping them carefully halfway through.

    Serve warm with your favorite taco toppings.

💡 Tips

Serve these with a side of fresh guacamole or cilantro lime crema for dipping. If you have leftovers, store them in an airtight container in the fridge and reheat them in the oven to bring back that crunch.
