Fideo is a classic comfort food that holds a special place in my heart. The magic starts by browning the thin noodles in oil, which gives the entire dish a lovely nutty aroma and a rich flavor that you just cannot get any other way.

This recipe is so simple to put together on a busy weeknight. I love that it is a blank canvas, so you can easily stir in some leftover chicken or beans to make it a hearty meal for your family.

🧺 Ingredients

  • 7 ounces fideo noodles or vermicelli broken into small pieces
  • 2 tablespoons vegetable oil
  • 3 medium tomatoes
  • 1/4 small white onion
  • 1 clove garlic
  • 4 cups chicken or vegetable broth
  • 1/2 cup fresh cilantro chopped
  • Salt to taste

    Place the tomatoes, onion, and garlic in a blender. Process until you have a smooth sauce and set it aside.

    Heat the oil in a large pot or deep skillet over medium heat.

    Add the dry noodles to the oil and stir them frequently. Keep cooking until they turn a deep golden brown color.

    Carefully pour the blended tomato sauce into the pot with the noodles. It will sizzle quite a bit.

    Cook the sauce with the noodles for about 2 minutes until it thickens slightly.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. Keep in mind that the noodles will absorb more broth as they sit, so you may need to add a splash of water or broth when reheating. Serve this with a squeeze of fresh lime juice or a crumbled slice of queso fresco on top.
