There is nothing quite like a bowl of creamy chicken soup to chase away the chill on a cold day. This recipe is one of my absolute favorites because it is packed with tender chicken, colorful vegetables, and a velvety broth that the whole family will love.

My secret to getting that perfect texture is to whisk the flour into the butter before adding the broth. It keeps the soup smooth and prevents any lumps from forming while it simmers to perfection.

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 3 tablespoons all purpose flour
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
