My favorite thing about this recipe is how easy it is to pull together on a chilly evening. If you want a smoother texture, you can use an immersion blender right in the pot before adding the final splash of cream.

  • 2 cups fresh pumpkin, peeled and cubed
  • 2 large apples, peeled and chopped
  • 1 yellow onion, diced
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
