This dish is a staple in my kitchen because it is so comforting and full of bold flavors. You get the perfect mix of tender chicken and savory sausage, all brought together by a bright, vinegary sauce that everyone at the table will love.

It is a wonderful meal for a busy weeknight or a relaxed Sunday dinner with friends. My best tip is to keep a good crusty loaf of bread nearby, because you will definitely want to soak up every last drop of the sauce from your plate.

🧺 Ingredients

  • 2 pounds chicken thighs, cut into chunks
  • 12 ounces mild or spicy Italian sausage links, sliced
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 1 red bell pepper, sliced
  • 1/2 cup pickled cherry peppers, chopped
  • 1/2 cup sliced green olives
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1 tablespoon fresh rosemary, chopped
  • Salt and black pepper to taste

    Season the chicken pieces with salt and pepper.

    Heat the olive oil in a large skillet over medium high heat.

    Add the chicken and sausage to the pan and brown them on all sides until golden.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. This dish tastes even better the next day once the flavors have had more time to meld together. You can serve this over a simple bed of pasta or polenta if you prefer something heartier than bread.
