There is something about this salad that makes it a favorite in my house. It brings together juicy steak with cool cucumber and sweet corn, making it light enough for a summer evening but hearty enough to keep everyone full.

My best tip is to let your steak rest for a few minutes before you slice it. This keeps all those delicious juices inside the meat rather than all over your cutting board.

🧺 Ingredients

  • 1 pound flank or sirloin steak
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 cups chopped romaine lettuce
  • 1 cup fresh or canned corn
  • 1 large cucumber, diced
  • 1 ripe avocado, sliced
  • 1 jalapeño, seeded and minced
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons lime juice
  • 1 tablespoon honey

    Season the steak on both sides with salt and pepper.

    Heat one tablespoon of oil in a large skillet over medium high heat.

💡 Tips
