Moist Greek Yogurt Zucchini Bread

- 1/2 cup plain Greek yogurt
- 1/2 cup honey
- 1 large egg
- 1/4 cup melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

Store your leftovers in an airtight container at room temperature for up to three days. If you want it to last longer, you can wrap slices tightly and freeze them for up to two months. It tastes wonderful served with a little bit of butter on top.
