Lunchbox Mini Chocolate Chip Muffins
These bite sized muffins are soft, moist, and perfect for packing in school lunches.
recipesbynani.comMy family loves these mini muffins because they are tender and packed with just the right amount of chocolate chips. I keep them simple by using Greek yogurt for extra moisture, which makes them stay fresh for a couple of days in the pantry.
Since these are mini, they bake up very quickly. I recommend using a mini muffin tin and paper liners so that clean up is a breeze after you finish baking.
🧺 Ingredients
- 1 and 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plain Greek yogurt
- 1/2 cup granulated sugar
- 1 large egg
- 1/3 cup melted butter or oil
- 1 teaspoon vanilla extract
- 1/2 cup mini semi sweet chocolate chips
👩🍳Instructions
- 1
Preheat your oven to 375 degrees Fahrenheit and grease a mini muffin tin or line it with paper liners.
- 2
In a large bowl, whisk together the flour, baking soda, and salt.
- 3
In a separate medium bowl, mix the Greek yogurt, sugar, egg, melted butter or oil, and vanilla extract until smooth.
- 4
Pour the wet ingredients into the dry ingredients and stir with a spoon until just combined. Do not overmix.
- 5
Gently fold in the mini chocolate chips.
- 6
Spoon the batter into the prepared muffin tin, filling each cup about three quarters of the way full.
- 7
Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean.
- 8
Let the muffins cool in the pan for 5 minutes before moving them to a wire rack.
💡 Tips
Store these muffins in an airtight container at room temperature for up to three days. You can also freeze them for up to two months and pop one into a lunchbox in the morning to thaw by snack time.
