  • 2 cups grated zucchini
  • 1 cup canned pumpkin puree
  • 3 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely chopped onion
  • 1 cup all purpose flour

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
