Kid Friendly 4 Ingredient Banana Pancakes
A simple and healthy breakfast that little ones and parents will both enjoy.
recipesbynani.comThese little pancakes are a total lifesaver on busy mornings. Since they only use four ingredients, you can whip them up in no time, and they are naturally sweet enough that you do not even need syrup. I love making these for my grandkids because they are soft and easy to chew.
If you want them extra fluffy, try mashing the banana until it is very smooth before adding the eggs. You can even throw everything in a blender if you are in a real hurry.
🧺 Ingredients
- 1 large ripe banana
- 2 large eggs
- 1/2 cup almond flour
- 1/2 teaspoon ground cinnamon
👩🍳Instructions
- 1
Peel the banana and place it in a medium bowl, then mash it with a fork until it is mostly smooth.
- 2
Crack the eggs into the bowl and whisk them together with the mashed banana until well combined.
- 3
Stir in the almond flour and cinnamon until you have a thick batter.
- 4
Heat a nonstick skillet over medium low heat and lightly grease it with a little oil or butter.
- 5
Pour small circles of batter into the pan, using about two tablespoons for each pancake.
- 6
Cook for about two to three minutes until small bubbles form, then gently flip and cook for another minute until golden brown.
💡 Tips
Store any leftovers in an airtight container in the fridge for up to two days. These freeze really well too, so you can just pop them in the toaster when you need a quick snack.
