There is nothing quite like a pot of creamy chicken stew bubbling away on the stove when you need a little comfort food. This recipe uses chicken thighs because they stay nice and juicy while cooking, and they soak up all those delicious savory flavors in the broth.

My best tip for this stew is to make sure you cut your potatoes into uniform pieces. This helps them cook at the same rate so you do not end up with some mushy bites and some hard ones. It is a simple meal that feels like a warm hug in a bowl.

🧺 Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 3 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound potatoes, peeled and chopped
  • 3 large carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 cup all purpose flour
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large Dutch oven over medium high heat.

  2. 2

Season the chicken pieces with salt and pepper, then add them to the pot and brown them on all sides. Remove the chicken and set it aside.

  3. 3

In the same pot, add the onion, carrots, and celery. Cook until the onion is soft, then stir in the garlic and cook for another minute.

  4. 4

Sprinkle the flour over the vegetables and stir constantly for one minute to cook off the raw flour taste.

  5. 5

Slowly pour in the chicken broth while whisking or stirring to prevent any lumps from forming.

  6. 6

Add the chicken back into the pot along with the potatoes and dried thyme.

  7. 7

Bring the stew to a boil, then turn the heat down to low. Cover and simmer for about 40 minutes or until the potatoes are tender.

  8. 8

Stir in the heavy cream and let it heat through for a few minutes. Adjust salt and pepper if needed and top with fresh parsley before serving.

💡 Tips

Leftovers taste even better the next day once the flavors have had time to meld in the fridge. Store this in an airtight container for up to three days. If you want to freeze it, wait to add the cream until you reheat it for the best texture.
