There is truly nothing like the smell of tomatoes and garlic roasting in the oven to make a house feel like a home. This soup is one of my favorite ways to use up a big harvest from the garden, and the deep flavor from roasting the vegetables makes it feel extra special.

My biggest tip for this recipe is to make sure your tomatoes get a nice char in the oven. That little bit of caramelization adds a depth of flavor that really makes the soup shine. It is simple comfort food at its very best.

🧺 Ingredients

  • 3 pounds fresh tomatoes, cut into wedges
  • 1 large yellow onion, chopped
  • 6 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 cups vegetable or chicken broth
  • 1 cup fresh basil leaves
  • Salt and black pepper to taste
  • 1/2 cup heavy cream or coconut milk for creaminess

    Preheat your oven to 400 degrees Fahrenheit.

    Place the tomato wedges, onion, and garlic cloves on a large baking sheet.

    Drizzle the vegetables with olive oil and sprinkle with dried oregano, salt, and pepper. Toss everything until well coated.

    Roast in the oven for about 40 to 45 minutes until the vegetables are soft and slightly browned at the edges.

    Transfer the roasted vegetables and all the juices from the pan into a large pot or a high speed blender.

    Add the broth and fresh basil, then blend or use an immersion blender until the soup is as smooth as you like it.

    Pour the soup into a pot if you used a blender and stir in the cream or coconut milk over low heat until warmed through.

    Taste and add more salt or pepper if needed before serving.

💡 Tips

Serve this soup with a toasted grilled cheese sandwich for a classic lunch. You can store leftovers in an airtight container in the fridge for up to four days or freeze it for up to three months.
