Homemade Raspberry Brioche Bread Pudding
This warm and comforting bread pudding features buttery brioche and fresh raspberries in a sweet custard.
recipesbynani.comThere is something so special about a warm bread pudding on a slow weekend morning. The combination of rich custard and tart raspberries creates the perfect balance of flavors in every bite.
I always recommend using bread that is a day or two old because it soaks up the custard much better than fresh bread. This makes the texture perfectly soft on the inside while staying slightly golden on top.
🧺 Ingredients
- 1 loaf of brioche bread, cut into 1 inch cubes
- 2 cups whole milk
- 1 cup heavy cream
- 4 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups fresh raspberries
- Whipped cream for serving
👩🍳Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit and grease a medium baking dish with a little butter.
- 2
Arrange the brioche cubes evenly across the bottom of your prepared baking dish.
- 3
In a large bowl, whisk together the milk, cream, eggs, sugar, vanilla, and salt until smooth.
- 4
Pour the custard mixture slowly over the bread cubes, making sure every piece is soaked.
- 5
Gently tuck the raspberries in between the bread cubes.
- 6
Let the dish sit for about 15 minutes so the bread absorbs the liquid.
- 7
Bake for 40 to 45 minutes until the pudding is set and the top is golden brown.
- 8
Serve warm with a generous dollop of whipped cream on top.
💡 Tips
Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat individual portions in the microwave for a few seconds before serving with fresh cream.
