Hearty Vegetable Masala

recipesbynani.comThis vegetable masala is one of my favorite ways to get plenty of goodness into a cozy bowl. It is perfectly creamy and just hearty enough to satisfy everyone at the dinner table.
I love serving this when I want something comforting but light. If you have any leftover veggies in the fridge, toss them in to make this dish your own.
🧺 Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 cups cauliflower florets
- 1 large carrot, sliced
- 1 cup frozen peas
- 1 bell pepper, chopped
- 1 can tomato puree
- 1 teaspoon ground turmeric
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 cup heavy cream or coconut milk
- Salt to taste
- Fresh cilantro for garnish

Heat the oil in a large pan over medium heat and add the onion. Cook until it turns golden brown.

Stir in the garlic and ginger and cook for another minute until fragrant.

Add the cauliflower and carrots to the pan. Sauté for five minutes.

Pour in the tomato puree along with the turmeric, garam masala, cumin, and chili powder. Stir well to coat the vegetables.

Cover the pan and let it simmer on low heat until the vegetables are tender.

Add the peas and bell pepper, cooking for an additional five minutes.

Pour in the cream and stir gently to combine. Season with salt as needed.

Turn off the heat and garnish with fresh cilantro before serving.
💡 Tips
Serve this masala hot with a side of fluffy basmati rice or warm naan bread. Store any leftovers in an airtight container in the fridge for up to three days.
