When the evenings get a bit chilly or I have a hectic day ahead, this taco soup is my go to dinner. It uses simple items I usually have in my pantry and freezer, so I can whip it up without an extra trip to the store. The flavors come together beautifully after simmering, creating a bowl that is both satisfying and warm.

My best tip for this recipe is to keep a variety of toppings on hand. A sprinkle of fresh cilantro, a dollop of sour cream, or some crunchy tortilla chips really make each bowl feel like a special treat.

🧺 Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 1 packet taco seasoning
  • 1 can pinto beans, drained and rinsed
  • 1 can whole kernel corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 can tomato sauce
  • 2 cups beef broth
  • Tortilla chips, shredded cheese, and sour cream for serving

👩‍🍳Instructions

  1. 1

Brown the ground beef and diced onion in a large pot over medium heat until the beef is fully cooked.

  2. 2

Drain any excess grease from the pot.

  3. 3

Stir in the taco seasoning to coat the meat well.

  4. 4

Add the pinto beans, corn, diced tomatoes, tomato sauce, and beef broth to the pot.

  5. 5

Bring the mixture to a gentle boil.

  6. 6

Reduce the heat and let the soup simmer for about 20 minutes to allow the flavors to meld together.

  7. 7

Serve warm with your favorite taco toppings.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to four days. You can also freeze this soup for up to three months. If you like extra heat, feel free to add a few dashes of hot sauce or some diced jalapeños before serving.
